Oysters at the Nicholson Inn! We had a blast last weekend at the Maine Oyster Festival. Aside from being the MC of the public oyster shucking contests, we also shucked for the Perfect Oyster judges. This photo shows just one of the three trays that each judge had to assess for look, flavor, texture, etc. All are from Maine coastal waters. This shot shows the huge range of oysters our wonderful, clean, cold coastal waters offer up to our oyster farms.
The range of flavors and textures vary a ton, as well. We like small to medium oysters at the Nicholson Inn in downtown Freeport. Briny but not tooooo salty, sweet but not tooooo sweet. Best served with some cold IPAs from our many area breweries or with a crisp Sauv Blanc or Sancerre.
